A Brief History

After spending his early twenties working as a sommelier, Tom Sivilli decided to jump into the production side of the wine world. After bouncing between hemispheres and harvests, he landed at Cameron winery in the Dundee hills. There, he crafts Chardonnay and Pinot noir alongside founder, John Paul. In 2018 Tom began a small side project focusing on traditional method sparkling wines. Tom has borrowed the lessons of patience and attention to detail from his time at Cameron. His goal is to create sparkling wines of depth that showcase the vineyards he works with.
