Our Influences
First and foremost, we are students. We know that whatever success we have is due to those who came before. First in The List of influences, is of course John Paul of Cameron Winery. We have worked diligently under his tutelage for the past twelve years. He has taught us the great lesson of patience. He has taught us to trust our instincts and to let the wines become what they are meant to become. He also taught that when intervention is necessary, be swift and exact. To be short, this project would not be what it is without him.
Our dear friend Star Black was a tireless advocate for this project. She knew good wine, knew good people, and knew a good hustle. We here at Sivilli wine project miss her every day, and we thank her with every bottle produced.
Joshua Rayman. He is the man who taught us everything we know about the world of wine. He also taught us the two most import rules of bartending. Never get out of bed for less than $100 and never pour drinks on the back bar. Rules we still live by.
The numerous folk who we have worked with, and have made us better at what we do. in no particular order Matthew Layng, Jack Fagundes, Joseph Papas, Kristina Nunes, Joan Howell, Jim Sivilli, Dan Sivilli, Jonathan Nagar, Shaun Pope, Chad Hagemann, and of course Busta Rhymes.
and those I have not had the pleasure to meet-
Raphael et Vincent Bereche. If those gentlemen knew how much bereche we have drank, they would be alarmed. We strive for the precision and grace their wines offer.
Mousse et Fils. We love the wild exuberance of these wines. They are also a touchstone of what we want to achieve.
Jacquesson. First and best.
Thanks to one and all.
